John Poiarkoff is the Executive Chef of Marta, Caffe Marchio, and Vini e Fritti, Union Square Hospitality Group’s (USHG) Roman-inspired restaurants and bar located in NYC’s Redbury Hotel. An alumnus of USHG, John began his culinary career at USHG’s two Michelin-starred restaurant, The Modern, after graduating from the International Culinary Center in 2006. During his five years at The Modern, John ascended from line cook to sous chef, a position he held for three years.
John later opened two Brooklyn- based-restaurants, The Pines and Willow. During his time leading these culinary teams, John developed and refined his unique take on New American cuisine and in 2013 was named a semi-finalist in Eater’s Young Gun awards. Prior to joining Marta, John was the culinary director of Eat Serious Have Fun, a Westchester-based restaurant group, where he oversaw all culinary operations for The Cookery, The Parlor, and Eugene’s Diner & Bar.
